APPETIZERS & SMALL PLATES:
Come one, come all to a fabulous appetizer/small plate class taught by Michael Reyes, a talented young chef who has brought himself more acclaim in his tenure behind the stove than many ever do. Olympic baseball took him to Germany in 1996. It was there he stopped running the bases, and for two years worked in several name restaurants as an apprentice. He came back to the states and attended Pasadena’s
Le Cordon Bleu.
In 2001, our pal Gale Kohl chose him to open her Gale’s Restaurant and also help with catering. After he moved on to work as executive chef for executive dining and catering with Brighton Collectibles, Gale still calls on Michael to be her caterer from time to time. Michael has remained one of Gale's favorite chefs. We are so happy that she tipped us off about his large talent and helped get him to the Arboretum to let us in on his talent!
Michael is going to demonstrate small plates and appetizers for this Fresh class, with a strong emphasis on cooking techniques—Michael is a natural born teacher. He will cover knife skills, basic cooking techniques, and the regimen for a true cooking school that is not too intimidating. You will understand why the Culinary Arts at the Art Institute in San Diego and the Inland Empire have him on staff -- also the Southwestern Community College in San Diego! Further, Michael will show us how these delicious recipes use ingredients that can be incorporated into many different plates!
Menu:
Ahi Tuna Poke with Wasabi-Sesame Gastic
Shrimp Ceviche with Mango and Heirloom Tomato Salsa
Tea-Smoked Pork Belly with Asian Slaw
Braised Short Ribs with Roasted Root Vegetables
Chocolate Bread Pudding with Spiced Cream
