CLAUD BELTRAN Of NOIR FOOD & WINE
Wednesday, March 10
3-5pm

Chef Claud Beltran will be here on March 10 to dazzle us with some of the delicious food and wine he serves forth at Noir in Pasadena. Claud will teach two dishes from the menu, one being Roasted Stuffed Chicken Leg ala Upright Clayton. In plain English, it’s a boned chicken leg stuffed with shitake mushrooms, cotija cheese, tarragon, mixed carrots and smoked tomato sauce.

Wednesday is the day Claud scours the Santa Monica Farmers Market for the best produce available. He will also teach us several dishes inspired by what he finds there. We will write the recipes and email them after class. This should be a very interesting and exciting afternoon. How many times can you follow the thought process of a great chef as he comes up with new dishes?!
