Langham Huntington, Pasadena to hold Farm to Table dinner March 4

On Friday, March 4, 2011, The Terrace at The Langham Huntington, Pasadena is pleased to host a “Farm to Table” dinner showcasing the exquisite artisanal cheeses from Cypress Grove Chevre, a leading producer of fine American goat cheese based in Humboldt County, California. Terrace Chef de Cuisine Erik Schuster will create a five course tasting menu featuring a specific cheese from Cypress Grove in each course, along with perfectly paired wine and beer selections.

Chef Erik Schuster and Cypress Grove Chevre Founder and Master Cheese Maker Mary Keehn will present each course and explain the characteristics of the dish, the highlighted cheese and the beverage pairing. The evening will begin with a cocktail reception in the hotel’s Lobby Lounge at 6:30 p.m. followed by dinner at 7:00 p.m. in The Terrace.

The five course, prix fixe menu, including hors d’oeuvres, an amuse bouche and a pre-dessert is $95 per person including wine and beer pairings, and will feature the following award-winning cheeses from Cypress Grove Chevre:
Humboldt Fog, with its signature ribbon of edible vegetable ash under the rind and through the center creating a cake-like appearance;
Purple Haze, with its perfect mixture of lavender and fennel pollen;
Midnight Moon, aged six months or more to achieve its firm, dense texture and smooth, nutty, brown-buttery flavor with prominent caramel notes;
Lamb Chopper, a buttery sheep milk cheese with a long, complex finish;
The earthy and elegant Truffle Tremor, where the classic flavor of truffle meets the velvety perfection of ripened goat milk cheese; and
Bermuda Triangle, which when thinly sliced with a cheese wire creates a distinctive presentation, is a surface-ripened and ashed goat cheese that becomes creamier with age.

Chef Erik Schuster specializes in seasonal and sustainable California cuisine, focusing on local produce and quality ingredients. His “Farm to Table” menu featuring Cypress Grove Chevre’s artisanal cheeses will showcase the distinct flavors of each cheese in creative ways with dishes such as Truffle Tremor Popcorn Bisque, Bermuda Triangle Salad and a Purple Haze “Cigarette,” among others.

Cypress Grove Chevre Founder and Master Cheese Maker Mary Keehn has been recognized for the American flair she brings to European-style cheese making, earning Cypress Grove numerous awards, including most recently a gold medal in the Fresh Chevre category at the World Cheese Awards in November, along with three other wins at this highly esteemed international competition.
